Speaking of seafood, this thinner Muti hot sauce was developed specifically to go with oysters, though will happily splash on any refined bite you care to indulge yourself in - tacos al Pastor anyone?
So, what is it?
When I make my troublesome trio of hot sauces the only ingredient added to the fruit, veg & spices is organic-approved Atlantic sea salt. This draws some liquid out of the fruit & veg &, sometimes, a little more liquid than I require for the finished sauces is drawn. I ladle some of the excess juices out and age them for a few more months while I build up enough of it to do something with.
For Pure Trouble #4 I blended juices from both Troublemaker and Double Trouble & gently heated it with a little rapadura sugar to end the fermentation & balance the acidity.
Voila! 20 bottles.
There are few solids in there, so you've a bottle of extracts & infusions of pineapple, red pepper, scotch bonnet, onion, carrot, garlic, ginger, thyme, cumin, smoked paprika, black pepper, pimento &, of course, a little of that cold Atlantic sea salt & rapadura sugar.
